I just KNOW that there are a lot of chili experts out there in Dawg Nation. My go to site says this National Day refers to chili con carne, specifically. So...any good/great recipes you can share?
Also National Take A Nap Day.
These two can go together likes peas and carrots.

Great chili is a joy. I tend to make mine too thick and lacking flavor depth, but with good mouth feel. Can serve it over rice and get the benefit of the beans (beans + rice = complete protein). Yes, con carne (with meat) is the way to go.
My wife has a chili lentil recipe, basically just substituting lentils for beans. Very nice, and yes, I have it over rice, which is nice.
We eat my wife's vegetable soup over rice with bacon on the side. Alot a bacon. Havent tried chili over rice yet though
My girlfriend brought me some green turkey chili for lunch today. Don't knock it til you try it. It's the best I've ever had.
