Interesting ghost bro. I noticed a difference even with low and slow and then ramping up to 450. However, the fridge thing I will incorporate next go around before hitting the smoker.
Yes the high heat finish certainly helps. I didn't get into that, but it's a good method.
When I make smoked wings, 225 2.5 hours or until cooked through. Then throw them in the deep fryer for a min or two. When done right they're the best wings you can get.

Those look really good but I have a question. You only eating 4? Geez, teenage boys eat a lot. We have to cook 5 pounds when we cook them.
A traeger is like cheating. They perform so well. Not my thing, but I appreciate good food and you did it.
You're not kidding...I've got 3 teenage boys, a 12 year old boy, and a teenage girl! The volume of food that goes through my house when we are all together is staggering!
Well, I don’t separate the flat from the drum, so, it’s like I’m eating 8. But, I did go back and get 2 more.
I always said the same thing, until I had some food off of one. After that, I had to retire my offset drum smoker.
