Seeing this made me realize I had some pics to share. I finally went to the dark side and got a pellet smoker; I have to say, results to date have been really tasty! I also got my bourbon legacy bottle started. Life is good in Central Texas!

Plating in this case is an easy fix. Place the rice in medium size bowl and overturn in the middle of the plate, so it's a perfectly round dome. Place the meat around it, sprinkle that herb mixture on top for color contrast and then drizzle a Hoisin sauce on top.
I go to a lot of 3 * Michelin restaurants. ;-)
Brisket is my absolute favorite!! My Father-in-Law (God rest his soul) took my wife and I to Graceland for a weekend trip, on a complete whim. We went to a BBQ restaurant near Graceland, and it was really good (just down the road from Graceland), and I wanted to have fun with my F-i-L, so I told the waiter, "I don't see any beef on the menu." The waiter said, "Where do you think this is, Texas?".
My F-i-L wanted to crawl under the table.
My wife does the cooking...she does such an awesome job, and she loves to do it. She buys chicken thighs (they're pretty cheap) and she put them on the grill for a late Saturday night supper the other night...the chicken thighs are soooooo juicy, they really don't need much sauce, but I like sauce anyway so she adds it.
Another thing she does when she doesn't have time to cook is she puts the chicken thighs with vinegar in the Crock Pot (I know, I know), and lets them cook all day. By supper time, she takes them out and chops them up. Personally, I like it every bit as much as I do pork, and she makes a vinegar pepper sauce that is absolutely amazing. Add a pickle and a sesame seed bun, and that's an unbeatable sandwich for game day!
Ha...love the Graceland story. I almost got kicked out of a restaurant in PCB because their marquee said "Dallas Style Pork Ribs" and I told the manager that the only pigs to come out of Dallas were on a train!
No shame in a good crockpot game...my wife makes Italian beef in the crockpot that would make you slap your Granny!

What you boys throwing on the grill/smoker for the game this weekend? We just sold our house and this will be our last game day at this home and we want to go out with a bang!
I have a green egg and use it a lot but haven't smoked anything past 4-5 hours. Wouldn't mind if something took 6 to 8 so I'm looking for some suggestions.
