Didn’t think to snap pics as we were getting the crib ready but that strategy was super easy and earned rave reviews given the rain. Had a break in the rain, so after 7 hours in oven I tossed em on the grill for about 15 minutes the wrapped them back up in foil and put in a cooler for an hour. No sauce...had that on the side. Not as good as you Pros can do but it worked and was easy.
As long as you liked them, that's all that matters.

Went to Winn Dixie Saturday and bought 5.5lb NY S trip at 4.99/lb and a 6 pound Boston Butt @$0.99/pound with an additional $5 discount for spending over $30. Total cost (including a few other items) $47.52 with savings of $71.16! Long live WD
BTW for ribs I use the 3,2,1 cooking method. Smoke at 225 as is for 3 hours, wrap in foil with Apple cider and butter and return to grill for 2 hours then unwrap, baste with BBQ sauce and grill for 1 hour (all at 225)
If I am honest, I would really like BHM if there weren't so many Bama fans. It is slowly dying though...now third in the state in population and trending down. GA is home and when the little monsters are out of high school I want to move back, but to where. The ATL suburb I grew up in is not what it used to be, and the traffic is truly a burden. At least when Mrs. Chopper and I move back the school district is no longer a concern. TBD...
