Reverse seared filet mignon using direct/indirect heat. Potatoes on the grill rubbed with olive oil and sea salt wrapped in foil. Sauteed onions and garlic with olive oil, Corn on the cobb on the grill as well with my wife's version of street corn sauce....
Sipping on some Eagle Rare...
13 hours into this cook. Went real low and slow over night at 200 degrees. I’m at 275 now
Started off with some delicious chicken. Overnight marinade in Italian dressing and added a rub I found on YouTube. Indirect for 20-25 minutes, then direct for a few minutes and rest under foil for five. Sliced it up as a salad topping.
Finished up with some burgers!
The pizza and Eagle Rare were on Friday night...I put avocado and cilantro on the jalapeno and tomato pie; it was really good!
The ribs plate was tonight; 4 hours at 275 degrees with Stubb's sauce at the end...delicious! Of course the Eagle Rare was the star of the weekend!

I didn’t really do anything amazing this weekend. Just burgers. I also prepped the smoker for this upcoming weekend. I got a event I’m doing some butts for. Also, smoking some green beans, and beans for them. They will also have slaw and peach pies.
Too late to get pictures; Two 1” thick ribeyes cooked for 8 minutes at 550. Marinated in Long Hong grilling seasoning. Baked potatoes & buttered toast. A glass of Biltmore Dry Rose’. Later, Blue Bell vanilla ice cream.
It all sounds great, but being a Texan, Blue Bell takes the prize!

While in Texas I had many Shiner Bocks, and indulged in the Karbach's Crawford Bock and Love Street Blonde. The ladyfriend enjoyed their Hopadillo. Next time I'm there I'm picking up a case
Trying out my new pellet smoker today while sipping on some Blantons...

The pellet smoker was great!!! Smoked a butt and a head of cabbage Low and slow for 9 hours at 225°. The cabbage was only on for 4 hours....
